Recipe: The Perfect Vanilla Cupcake
Ingredients (makes 12 cupcakes):
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp pure vanilla extract
- ½ cup whole milk
Frosting
- ½ cup (1 stick) unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp heavy cream (or milk)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well. Stir in vanilla.
- Add flour mixture in three parts, alternating with milk, beginning and ending with flour. Mix until just combined.
- Divide batter evenly among liners. Bake 18–20 minutes, or until a toothpick inserted comes out clean. Let cool.
- For frosting: beat butter until smooth, then add powdered sugar, cream, vanilla, and salt. Whip until fluffy.
- Frost cooled cupcakes and, if desired, sprinkle with colored sugar or edible pearls.
