Recipe: The Perfect Vanilla Cupcake

Ingredients (makes 12 cupcakes):

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • ½ cup whole milk

Frosting

  • ½ cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well. Stir in vanilla.
  4. Add flour mixture in three parts, alternating with milk, beginning and ending with flour. Mix until just combined.
  5. Divide batter evenly among liners. Bake 18–20 minutes, or until a toothpick inserted comes out clean. Let cool.
  6. For frosting: beat butter until smooth, then add powdered sugar, cream, vanilla, and salt. Whip until fluffy.
  7. Frost cooled cupcakes and, if desired, sprinkle with colored sugar or edible pearls.
