Classic Chocolate with Vanilla Swirl Cupcakes

Instead, her hand reached for the romance on her nightstand, the one where a grumpy bookstore owner finally admits he’s in love with his sunny next-door neighbor.

As the story unfolded, so did the scent of chocolate from her kitchen. She had slid a tray of cupcakes into the oven earlier, and now the air was rich and sweet. By the time the hero and heroine were confessing their feelings, Nora was swirling vanilla frosting on chocolate cupcakes, light against dark, soft against bold.

The book made her sigh. The cupcake made her smile. Together, they made the night better.

Recipe: Classic Chocolate with Vanilla Swirl Cupcakes

Ingredients (makes 12)

Cupcakes:

  • ¾ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder½ tsp baking soda
  • ¼ tsp salt½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk

Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin tin with paper liners.
  • In a medium bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  • Alternate adding dry ingredients and buttermilk, mixing until just combined.
  • Divide batter evenly into liners. Bake 18–20 minutes, until a toothpick comes out clean. Cool completely.
  • For frosting: beat butter until creamy, then add powdered sugar gradually. Mix in cream, vanilla, and salt until fluffy. Pipe frosting onto cooled cupcakes. For a swirl, use a star tip and move in gentle circles.
